Lovely article. I hope you will compose an equally definitive guide to the Snow Goose.
After reading your recipe, I was left wondering about the legality of hunting these prolific creatures. I understand that migratory bird laws are quite strict. Not that I myself am a hunter. I know that some of Canada's northern people rely on them as an important food source.
