I think you should have something on the maturing process though- mature must be over 1 year, extra mature 18 months and vintage over 2 years, from what I remember..

As good as Cheddar is, I find that most of the Cheddar cheese sold in the supermarkets is a bit rubbery. Lacking in texture and somewhat tasteless. Living in the fair county of Cheshire I can buy my cheese direct from the manufactures.
I piece of Cheshire Cheese, some crusty bread and a pint of , what more could a man want?
