Here is a website giving the recipe for Hog's Pudding

I recall (what I knew as) White Pudding as a young 'un, but I don't remember it being particularly spicy. Perhaps the version on the Plymouth/South Hams region was more bland ??
Anyone else have comments on this questionable delight ?

I definitely remember Hog's Pudding (or White Pudding as I knew it also). In Plymouth during the 1950s, the best place to get it was from Stevens the pork butcher, who also sold excellent sausages (far better than the mass produced supermarket ones of today). As far as I recall, their White Pudding was spiced, but not excessively so.

I've always known it as Hog's Pudding. It is still available in the surviving family butcher's shops in Devon (and Cornwall) at around £5.75 a Kg. A rich, distinctive flavour, grilled or fried .. delicious!
