(My favourite dish, hopefully served on May 17th - my birthday)
Children love it, I love it. In south-east Brazil this is the 'default' meal served with whatever you order. E.g. Beef (with rice and beans), Salad (with rice and beans), Scrambled eggs (with rice and beas) etc.. pp. ad absurdum. - BEWARE: Do not confuse it with feijoada, which is a special form of rice and beans, but more concentrated on the bean preparation - so not really a rice-dish. Standard rice and beans are just rice, beans and some salt. Nothing else. Mashed together.
It is terribly easy to prepare: Cook rice (one portion rice two of water add a teaspoon o'salt and boil till the water is completely evaporated) and cook beans (might be red kidney beans, but it's not really important). Get them rice and beans together 1:1 and mash. If you do it correctly you will end up with a brownish glorp that tastes wonderful and goes well with anything.

I've made an addition to this where you cook the rice in coconut milk rather than water.
Gives it more creaminess, and extra taste. You can also add some sliced red peppers with the beans too. (Oh, and tinned kidney beans work just fine. If you are cooking them, remember to do that all important 5 minutes at a full boil thing to remove the toxins)
