I would like to know a bit more about the cheese and its history. For how long has it been produced? How much is produced annually? What is the distribution (how many countries is it eaten in)?
I didn't know about the different skins, and I was interested in that.
Not quite sure about the recipes. I'd be interested to hear what other researchers think.
