Lighthousegirl - back on board

Recently there has been a lot of talk about food and cooking and PF suggested that we started a 'Cooking with Light' thread so here we are!

Now I am not that great a cook, and in real life there are all sorts of foods I cant eat, so I am not sure if I am the best qualified so lets hope that there is a high level of collaboration.

Dish of the day

We broke our Toaster recently and tonight OJ is going to get us a new one on the way home. Today's recipe will have to involve toast.

I am going to suggest bread, lightly toasted, spread thinly with raspberry jam and then topped with a thick layer of creamy cheese. Grill all the above lightly until the cheese has been warmed through.

I came up with a recipe recently.. it's sort of a take on baked brie..

Instead of brie I use a small round of Saga Blue (a German cheese that is kind of a cross between camembert and gorgonzola).

Cut the top 1/8" off and scrape enough of the cheese out of the bottom part to make a small indentation. You can put that on your toast.. smiley - winkeye

Fill the indentation with pear brandy (I like Schladerer)
Spread the top of the cheese round with quince jam and close it like a sandwich.

Sprinkle on some almonds and wrap it all in puff pastry. If you don't like messing with puff pastry the refridgerated crescent roll dough works well.

Bake per the instructions on the dough/pastry.

Serve with apple and pear slices.

Mmmm Sounds good Batty - OJ would like that smiley - smiley Who knows is he is very good I may even make it for him one day.

Well we did not have toast. OJ was not able to get the toaster we wanted so instead I have had, pasta with a sauce made from soft goats cheese, basil and lemon olive oil. Simple, but surprisingly tasty.

Last night my brother, his wife and their young daughter came round on their way home from my mothers - they had been there and had been being fed three times a day for about a week1 They wanted something light to eact so we had a buffet type meal - spring rolls, corn chips and dips, sausages on sticks etc

After they had gone we had cheese and bikkies smiley - smiley

For our New Years feast we've had the smoker going all day. Barbecued ribs, sausages, bologna, black-eyed peas, collard greens, cole slaw and corn bread. New Years Eve southern style. smiley - winkeye

For our New Years Eve meal we let someone else do all the work - we had a take out from our favourite chineese resturant - now that really is light cooking smiley - winkeye
