I am not sure about the way this works I suppose is the thing. I have been a member of a message board were you just post things randomly and no one ever replies directly to you, but not one like this. Also, I would not stay online very long, so am not sure the best way to utilise my time. This is very boring, however, I really want to know, so......

You're right it is more message board type rather than chat room, but that way you can have extended conversations with the same people, on the same subject - such as the vegetarianism thread you found.
the tip I would give is check when the last time the subject was mentioned and if less than a week you can usually reacitivate it unless every one has unsubscribed or lost interest in the subject. Hit the who's online button to see who's about and pop over and visit them have a nose around in conversations that interest you. Please note that some threads are very long (1000 postings isn't an unusual amount for busy social hello places and there's a lot of these.

I'm not quite sure what to liken the h2g2 forums to... it's almost as though you've got slowed down instant messanger with several people. It's nice... I always enjoy attempting to keep up with some of the forums I'm in.

As far as reactivating a thread goes, the mods don't have all the conversations done yet (mine only go back to 1 November at the moment; I've got stuff from August 1999 hiding back there somewhere) so there's still a lot missing in the Guide, but if you reactivate a Thread and say something interesting, it's very likely the people who originally started the thread will pick it up again no matter how old. I do, however, recommend starting threads on entry pages and on user pages-- or joining a few groups of some kind (there's the Keepers, the Muses, and a bunch of others) where you'll make lots of fast friends. http://www.bbc.co.uk/h2g2/guide/A270325 <-- there's a lot of clubs and such here.
