I'm afraid I've beaten you to the Piano Man.
The other two are great additions, though. I'll pop over and add them to the list now. Thanks for contributing!
And don't worry about stretching it! This is our entry, and we can do whatever we like with it.

I've got two:
There's "Acoustic Guitar" by The Magnetic Fields. It's played with a voice and a guitar, and indeed, the singer is singing to the guitar for the whole song. It has great lyrics like:
Acoustic guitar
If you think I play hard
Well, you could have been owned by Steve Earle
Or Charo or Gwar
I could see you tomorrow
So bring me back my girl...
Then there's that Todd Rundgren song (maybe it's on the list already...) that goes:
I don't want to work
I just want to bang on the drum all day.
Would T-Rex's "Bang a Gong" count? And is it already on the list?

Oh yeah--then there's this song called "The Hurdy Gurdy Man," which, judging from the results on CD now, is an old song done by folks ranging from Louis Armstrong to Donovan. I know it as a Butthole Surfers song.
Then there's Firehose's "Down with the Bass." The band is Firehose (lean, mean punk oufit) not Firehouse (middling-to-poor glam rock).
