He's right about the shell wanting to literally jump off the egg. It really does just slide off, especially if you get the egg out of the fridge and bring it to room temperature.

I've yet to get a perfectly round bottom, but if the egg is pierced, and shocked in cold water after cooking, it's a lot rounder than if not.

So I'm declaring this a result smiley - ok

I didn't use a glass, I used jar, about half full, lid screwed on, and shaken hard. This was an egg that was hard boiled in the usual manner, not shocked with ice water, and taken straight out of the fridge. Normally the shell would stick to the egg like glue, but not this one. The shell came off like a dream. The white is completely intact with no dimples of missing albumen smiley - bigeyes

It's going to come in handy for the next few months while I'm eating lighter, more summery dinners instead of heavy winter food. I like a hard boiled (or pickled) egg with my ploughmans lunch.

It seems that, for the best results, the egg should be put in the jar and shook up straight out of the fridge. I've had consistently perfect eggs de-shelled that way, but when I've let the egg warm up first I lose half the white and end up with an egg that looks like a golf ball.

In fact, this morning I almost managed to peel the shell off an egg in one long strip, like an apple peel smiley - bigeyes
