Watercress

I recently purchased some watercress- I read in an article that it has even more calcium thank kale, and I rarely see it at the store, so when they had some this last weekend, I bought some.
Only I've no idea what to do with it. Most suggestions are for salad- which isn't really do-able with lettuce and tomatoes out of season- or sandwiches. My usual sandwich is hummus with chopped veggies, I tried some hummus and cress and the cress was a bit too bitter IMO.
The only other recommendation I've found is for potato and watercress soup, which might be OK next week if the weather cools off a bit. It's going to be too warm for the next few days to even think about soup.
So... any suggestions? No eggs or dairy, please.
