It's that time of year again. I'd like to get some new ideas for summer meals, so preferably stuff for the pressure cooker, steamer or with very short cooking times.
Here's one I've just tried recently (saw it on my favorite PBS cooking show) for a farro salad.
Cook farro according to package instructions. In the meantime, bring some water to a boil in a saucepan. Reduce the heat and blanch a cup of green peas and then a cup of fresh or canned fava beans. (When blanching more than one kind of veg, always start with the milder flavored one first, as the water will absorb and transfer a bit of the flavor as you go) Saute a couple cloves of sliced or minced garlic in a large skillet. Stir in the farro, fava beans and peas. Add 1 tablespoon red wine vinegar, 2 tablespoons extra virgin olive oil, and salt/pepper to taste. Stir in 4-6 diced plum tomatoes (with seeds) and a handful of chopped fresh basil. Serve over arugula drizzled with olive oil. If you're a dairy eater, you can sprinkle with grated parrano or parmesan.
