Not particularly , I've gazed into the top of enough lobotomised pumpkins to know I don't much fancy eating what is inside.

The stringy part goes in the compost, even here in USakistan.
We use the flesh of the fruit, but not the rind, for baking and soup.
What varieties of pumpkins do you have over there?

These medium-to-large-sized orange ones are sold as "Jack-o-Lantern" pumpkins specifically?
Bred for structural strength and an even wall, they're much less flavorful, with a stringy texture, and a somewhat weird aroma.
