just to be pedantic, a tortilla isn't a pancake at all, it's flatbread, that is to say, bread with no leavening agent(yeast, etc).

also, might be a good idea to take the bone out of the turkey thigh at some point. at which point you might realize that any kinda meat will do, it's an arbitrary decision really. same goes for spices.

although, since the recipe calls for turkey, changing it too much makes it something else... but I do suggest more filler than just turkey and onions - perhaps adding some red/yellow bell peppers would be good, and more in fitting with the name of the recipe...
