A Conversation for How to Cook Chicken

Garlic with chicken

Find the largest chicken you can lay your hands on and stuff it with garlic. Oh, yes: I am quiet serious: If it takes seven whole garlic-onions (or whatever it is called in english) then you should use seven. Better yet: Try for the 8th too!
Put the bird in a pot (prefereably terracotta), pour the juice of one lemon over it. Add salt, white pepper, rosemary and the skin of the lemon. Close the pot, put it in the oven and let it fry at 200-250 centigrades for aprox. 90 minutes. Serve with bread - use the cooked garlics as "vegetarian butter".
You'll soon learn who your real friend are...

Or, alternatively, for a more subtle flavour, slice deep cuts into the chicken (whole or in pieces) and stuff small amounts of crushed garlic and herbs into the cuts. A little salt sprinkled over the top helps the skin become crispy and tasty.

More subtle flavour, eh? I doubt that. In spite of the rich amounts of garlic neither the flavour nor the aroma are nearly as brutal as you would expect. In fact they are quite delicate and - well - subtle.
Your own "aroma" however - now that's quite another ballgame. First time i tried this recipe was an easter-saturday. Several of my colleagues fainted when i breathed "good morning" to them the following tuesday...

Try this also: Surround the chicken with more garlic. Add bouquet garni and seal a casserole lid on with a flour/water paste. This keeps all the juices and flavours inside.
