po boy definition

i believe the definition here is a bit of a misnomer. a po boy is not 'any sandwich with meat'.
being short for 'poor boy', the name is a reference to the sandwich being so generously proportioned that it's a good deal... even for a poor boy.
po boys are served on a specific type of bread, which in new orleans is called 'french bread' (oddly barely discernable from bagette bread). typical legnths for po boys are 6" or 12" .
what goes between the bread can be almost anything: hot roast beef (seemingly the most popular), fried seafood (catfish, shrimp, oyster), even french fries with gravy. in general, poboys are served 'overstuffed' - so full of whatever is between the bread that it's difficult to prevent it falling apart as it's being eaten.
