A Conversation for Le Procopio Restaurant Pizzeria Glacier, Saintes, France
Pizzas in France

It's great to hear of a good restaurant anywhere, but there is something horrific about pizzas in France. The reason that food is almost universally good in France is the high standard EXPECTED by the French. Restaurants cook to the standard that will be accepted by the populace - in England they'll accept anything (unless they pay a lot) and that's what they get (unless they pay a lot). In France, spaghetti bolognaise and pizza (although admirable in themselves) were for tourists and the quality of even the cheapest food was maintained by xenophobia and critical appreciation. I hope there were only foreigners in this restaurant.
