Most of the time, we are all too busy looking at what we have and wishing we were living on the other side of the fence where it seems to be a little bit greener. I can't tell you how much I miss being out it the Flint Hills. Especially after living in Chicago and now in Boston. You are very lucky.
Never have I found such a place that can only be enjoyed if you are a peace within. Otherwise, you quickly grow bored, the hills become dull and all you see are hills, dead grass and wind.
I grew up 2 hours north of Wichita accross the state line. And, for the past 4-5 years, I have been retracing the Santa Fe Trail through places in Chase County and surrounding areas. (Trail ruts are still visible through satellite photos but have deteriorated rapidly over time. I will probably not be able to show my own kids these marks as a result.) When I tell people about this interest to be in the Flint hills, to have found anything to take me back, it almost gets embarrassing to actually admit to others that you find a peace in something that our media riddled society finds boring.
I envy you my friend.

Something odd about Wichita.
There is a resterant on every corner. It has one of the highest per capita number of eateries in the US. However, like Snake oil salesmen, then come and go. What was a French style bakery is now a bar-b-que rib joint.
PS The best ribs are from the many roaming smokers.
