I think the aeroplanes are travelling at different heights, so although it looks like they are flying through each other, they are really passing over and under one another. Which trains can't do.

Maybe. What I don't get is how a Concorde rated at 1,400mph only goes as fast as a maglev rated at about 400mph (in Deluxe, that is, as the original didn't have maglevs).

I don't think that they're flying at different heights as they all seem to climb to a similar height when taking off. Also, planes flying horizontally across the screen appear to be at the same height: when passing each other in this direction, it would be possible to see if there is a difference in height relative to each other.
Interesting point though.
