Some hindu recipes involving milk that I know involve boiling milk for a very very long time. Approximately how much time does it take for the Paneer-to-be to separate out fully?
Is there something about the way it looks feels or smells that would indicate readiness and clue in someone who has never made it before?
How long might it take to drain the paneer-to-be? Can you make this recipe with goat's milk, or only from kine?

I made paneer at home once. It gives one quite a feeling of accomplishment to be able to say that you've made cheese
Since this entry is a little on the short side, perhaps you could flesh it out with a little background - the fact that this is an Indian cheese for instance. Do you know if there are any regional variations in the ingredients or the way it's made?
You can also use vinegar to curdle the milk - use the same amount as you would lemon juice. If you want crumbly paneer you can remove the weight after 30 - 45 minutes. It's worth mentioning that since this cheese hasn't been matured, it's rather bland.
Once you've made your paneer how long will it keep and what can you do with it?

Thanks for your inputs! I have made some corrections. Please have a look. Humm... I don't know if there is any other name for capsicum but I am going to super market to check if they name it some thing specific!
Yes you are right some Indian recipes like Kheer and Rabdi involve boiling milk for loooooong time!
I have never tried paneer with goat milk but will definitely experiment and let you know the results!
Yes we can use vinegar as well but I don't use it simply because its smell lingers in the final recipe.
If you try my recipes please share your experience!!

Looking much better now
"Cheese will separate from water. in about 5-7 minutes."
It's curds and whey which separate. The curds (solids) are what you use to make the cheese and the whey (liquid) can be used for stock.

Do you keep the mixture boiling while you stir it waiting for the cheese to separate, or do you take the mixture off the heat?

Capsicum is the extract from cayenne pepper, I believe.

Nope - other way round.
Capsicum is the generic Latin for 'pepper' (the fruit variety, not peppercorns), and tends to get abused in assorted ways. A lot of people use it to describe certain breeds of chillies, others to describe sweet peppers. A third, probably more accurate way, is to use it to describe the seeds, and the extracts from the seeds. Cayenne pepper is made from the seeds of the cayenne chilli.
This entry has definite potential, but I still think it could use a run through a spellchecker.

Good question! Yes you keep it on flame and stir it for 5-7 min until paneer separates from water! Draining the water and running the cold water on paneer is obviously done off the flame

They are what I would call bell peppers. Most of the time, simply 'red (or green, or yellow) peppers' would be understood.

I'm really glad I found this entry. I will definatly be going out to try and buy a cheesecloth tomorrow so I can make this. Palak Paneer is my favourite dish when I eat Indian food and I would love to make it at home. I've just got a few small points to make, I hope you don't mind if I point them out.
You've used etc at the of the first two sentances, perhaps you could replace one of them, for instance you could put "amoung others"
Cheese will separate from water, - I think this sentance ourght to have the word "the at the start"
in about 5-7 minutes. - I think this sentance is missing a captial letter
and paneer will look like lumpy white mass - do you need the word "the" between "and" and "paneer"
I'm sorry to be such a nit picker. I hope you stick at it, I'd love to see this entry in the Edited Guide, we need more on how to cook Indian food !

Palak Paneer!! I love it.I have tried it once. I will call up my Mom, take the recipe, experiment and post it!
