If green tea(ormost other teas and coffees) are prepared with water that is just below boiling rather than actively boiling it will remove much of the bitterness. Just wait until the first pumes of stem start to rise, then take the water off the heat and pour over the leaves/grounds. It can also help to pour a bit of cold water over them just before the hot water.
