MJ... I was shopping yesterday with my son and showing him how to select a pineapple. They didn't have any papaya but I kind of know what I want him to know:

The most common variety in supermarkets is the Hawaiian "solo"

Never select a green papaya when you want a ripe one. They don't easily ripen (unlike bananas). Always select one 60pc+ ripe. They are ripe when golden and underripe when green.

In fact, you could add boiled green papaya as a side veg to your recipe? If you like... or a pudding? Not jello smiley - winkeye

I'm rambling... just the fruit selection bit, I think
