Thank you for this. I used to make lemon curd and it is much nicer than the shop bought versions. I gave up because it is rather high in calories (you don't say this!)
You might want to emphasise that the mixture needs to be heated very gently - which is why you put it over a pan of boiling water.
I'm not sure how hot jam jars ought to be. My jam making book says that jars should be heated to sterilise them but, if you were making lemon curd, you probably don't want them too hot before you put the curd in.
