Goody! Another cheese entry. How many's that, now?
I particularly like this entry - but only because I particularly like this cheese.
A few nitpicks:
Italicise 'Independent on Sunday'
any single ounce=a single ounce
"the provinces of Benevento, Naples, Latina, Frosinone and Rome, which together constitute a single geographical area." - called what? Or aren't we allowed to know?
Is it necessary to keep writing out 'Mozzarella de bufala' every time after the first? I would have thought once would be sufficient.
I would have thought the bit about where the name comes from would look better at the beginning.
A few usage suggestions, maybe (some of my own favourites, leastways):
- Pizza, obviously (particularly good mixed 2 parts mozzarella to 1 part medium cheddar and 1 part Monterey Jack - this mixture is excellent with spring onions as a potato skin filling, as well).
- Fresh with tomato & basil in an insalata caprese
- Top a chicken breast with slices of mozzarella and chorizo sausage, then bake in foil for 25 minutes. (This is delicious)
- Hasselback potatoes. Roast potatoes for half their time (~20 minutes), then turn over, slit the tops and sprinkly liberally with grated mozzarella, breadcrumbs, garlic and rosemary. Roast for remaining 20 minutes.
Jolly good otherwise.

I have yet to discover Mozzarella, although I think I've come across it at some time - that squeakiness sounds familiar...
What does it taste like?
Is Hasselbackspotatis [Hasselback potato]known outside of Sweden too?

Ah - so it could have been haloumi, not mozzarella that I've tasted then... so what *does* mozzarella taste like?
Master B - no, you don't sound Swedish, but then how would one be supposed to tell, since we're only allowed to post in English?
I've just never come across Hasselbackspotatis when I've been abroad... do I sound particularly Swedish?

A banana has a sweet taste - the riper the banana, the sweeter the taste...
In the feta entry we're at least told that it has a salty taste - but does mozzarella have that too? Or is it bitter, or with little taste unless combined with something else, or with a hint of walnuts, or... compared with some other cheese...
