This is a nice entry and should definitely be a part of the Edited Guide! 
There are three things I would change. In the first sentence, the syntax is disrupted by the phrase 'virginal white cubes of'. It is confusing, as a result, sound like the cheese is without virginal white cubes. Reword this.
You refer to dice of feta. This should be cubes of feta. While the word 'diced' does mean chopped into cubes, 'dice' refers only to those cubes with the spots on them that you use in games of chance.
'whence rennet is added' - whence means from where. This should be 'to which rennet is added'.
