Cornmeal muffins

- 3/4 cups cornmeal
- 1 1/4 cups milk
- 1 cup all-purpose flour
- 13 cup granulated white sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg
- 1.4 cup vegetable oil
Combine cornmeal and milk. Let stand 10 minutes.
Combine flour, sugar, baking power and salt in large bowl.
Add egg and oil to cornmeal mixture. Mix well. Add to dry ingredients, stirring just until combined.
Fill greased muffin pans 2/3 full.
Bake at 400F for 15 to 20 minutes. Makes 12 normal sized muffins or about 6 large muffins.
