the only chocolate to use in anything - including hot milk - is Lindt 85% dark chocolate. To eat a piece - it must be done slowly. One square should last at least five minutes. Nibble a bit, then let it melt in your mouth - no dribbling please.

Lindt 85%? Yep, I'd agree with that
It is rather an acquired taste to the English palate, as we expect chocolate to be sweet and slimey -- and Lindt 85% is most emphatically neither of those
