Are all the pictures that are on guide entrys available for us to use?

Within the site, yes. Outside it, no. Unless you happen to be able to get the permission of the originating artist (which will depend on the image).

Does that rule apply to the poems we post here as well?

Your poem is your own poem. Someone else's is theirs. You can link to someone else's poem wherever they've posted it, but it would be rather rude (and in breach of copyright) to copy the whole thing without their permission.
