Today was the last day. Only the Euro is now legal tender in the relevant countries. Does this mean it's OK to turn the old coins into earrings?

You can still convert all "in" currencies at their national banks. For IRP that means going to the bank opposite Trinity.
However, coin collectors will already give over the face price for a single year collection of Irish coins.
