Nice entry, you could mention the importance of having everything sterilised, and that it can be made more alcoholic (if desired by adding a good white wine yeast, reisling style yeast works well). You would need proper wine bottles though and wires for the corks.

Sorry I haven't got back to you sooner.
I have mentioned the importance of sterilisation in step 6 of the method, although you may have missed that.
The simple way of making it more alcoholic is to add more elderflowers as it's the yeast on the flowers that makes it alcoholic.

Good point, it's just that living in a town, and not too far from a motorway I have to wash everything I pick, even from my own garden! This means I tend to add yeast to everything. Have you ever tried carrot wine? If left for a couple of years to mature it tastes like scotch with the dry ginger already added.
