The term fat tuesday is quite appropriate for our New Orleans people - we have more fat,greasy people here with high blood pressure and bad cholesterol than anybody...Just try to get energetic in 100% humidity at 89 degrees farenheit for over half the year eating "heart healthy" jambalaya.Mardi Gras is supposed to be tied to religion , the Catholics supposedly get their crazies out on tuesday just to forget it all by Ash Wednesday.Then they stay that way,supposedly for all of Lent.But don't tell the Irish Catholics that because they are quick to forget it all by St. Patties day.
