I would like to add Neon Genesis Evangelion by Hideaki Anno and Ghost In The Shell by Masamune Shirow and Mamoru Oshii to the must-see list.
First one, if you like weird/cabbalistic/psychologic films, and the second one for the interested in cyberpunk/noir.
Anime can certainly *NOT* be described by Pokemon and Sailor-Moon.

Don't forget Princess Mononoke (the dubbed version is actually very good), Cowboy Bebop, El-Hazard, it just goes on and on.
