having been a chef for 15 years now i have seen the trade move through some great changes, there has not been a better time to go out and eat at the moment, i recently started working at a resturant in lowestoft, called Caravella, its just at the beggining of its life, and being there at the begging is a great exsperience, my knowlage and exsperience has come in to its own, and the owners have seen what i can do, and they have been very responsive. i love cooking, the manic chaos that is catering,we are currently running a tapas menu with a med menu running along side it, its early days yet, but its starting to look promising! its a hard life but i love it, my ambitions would be to open a rest. in spain, employing spanish waiters who can speak good english, german, and scandinavian, it seems that when i am abroad, segragation seems to happen, english food, german food, scandnavian food, i want to bring people together, with that, hopfully have a popular rest, anyway thanks for reading this, take care
