Since posting this recipe (for the HVS), I've eliminated all animal protein from my diet. For those of you who prefer a vegan option, just substitute the bulk of the cheese with crumbled firm tofu, and the parmesan with vegan grated cheese or nutritional yeast flakes.

This version is actually *much* tastier. And without all that cheese, no worries about all that saturated fat.
