In my personnel collection I think I have recipes for over 100 different varieities of soup, that's what you get for being a vegetarian for 7 years though, a wider variety.

But don't you just hate it when you go to a restaurant and you can't order soup because the only non-veggie thing in it is chicken stock!
If you want to put your favourite recipe up I'll happily reference it

I've got this great North African one which I'll post this evening for you.
Yeah Chicken stock and gelatine, these omnivores have no understanding of how difficult it is to live by your principles.

Or the fact that most lentil soups are boiled with bacon stock.

I chose my restaurants very carefully now especially having moved back to Northern Ireland, at least they understood a bit better in London.

Here's the one I was talking about.
Mixed Bean Harira for 6-8
100g Haricot Beans, soaked overnight and drained
100g Chick peas , as above
100g brown or green lentil, washed, drained
3l water
450g tomatoes quartered or tinnned
1 med. onion
1/2 tsp tumeric
1 tsp ground coriander
salt and pepper to tast
3 tbs flour
175 ml water
juice 1 lemon
But 1-3 in the water and boil. Reduce heat and simmer for 1 hour or pulses are tender.
Add tomatoes, onions, tumeric and corriander and leave for 1/2 hour. Beat the flour and water into a smooth paste and stir in.
Cook for another 15 minutes or until pulses are soft and just breaking up, add more water if ness.
Adjust the seasoning, stir in lemon and serve.
Far more nutrition than a cupasoup and the kitchen smells as good as the soup tastes.

Last night was a simple veg soup here...zucchini stock, broccoli, onions, carrots, green beans, a bit of hot sauce, salt & pepper, simmer for half an hour. Yum.
The zucchini stock I made last summer from our garden bounty. Take zucchini, cut into cubes about an inch across, chop an onion and throw it into a whole pot, just cover with water, simmer till tender, puree and freeze. Makes a good soup starter, thick and yummy with vegetable goodness.

Mmmm, I don't check in for a day and already there are some good recipes Keep up the good work folks. In the interests of openness and informative publishing, and although I personally am veggie, feel free to contribute you faves, whatever they are If you publish them as articles I'll be happy to reference them in the main article.

I suppose I should mention zucchini = courgette (which I always want to type as "corgi" or, for some inexplicable reason, "corleone", though clearly making soup from small dogs, tiny cars, or Mafia dons would be a mistake).

I wouldn't type corgi as it seems to be us veggies who are posting the recipes and not the omnivore cuppasoup lovers on the other forum thread.
