If you're taking a tourist to visit Wong Kei, then you want to make sure they get get the full-on experience. Specifically, you want to make sure you don't get the waiters messing about being polite to you.
The most reliable method I've found for getting Wong Kei waiters to be rude to you that doesn't involve being rude to them is to arrive on a Friday or Saturday evening with a group of 20 people, each of whom has had between 2 & 10 pints. If you do that, they see you as 'fair game', and start having a go straight away.
