You didn't mention the old city of Ciutadella, the old capital which I think is one of the most fascinating places I've been to being totally Spanish in character. The tale is that the then British Governor decided to move the capital to Mahon but the local native grandees were having none of it and said in effect 'You go to Mahon pal, we're staying here'
Another interesting thing is the island's first real road built by the British governor Kane and named after him. It's now largely ignored in favour of the new fast 'motorway' but well worth a leisurely drive or cycle down its length.
