Dear Bel,
I happened to see this article of yours through the link on your PS. And I am happy to see that I am the first one to be discussing this one.

I feel that the following link about 'dum cooking' may be a value addition to the history of pressure cookers. (google "dum cooking" - with double quotes for more links)

In Indian (North Indian) cooking there is a traditional method called 'DUM cooking' - dum loosely translates into pressure. The chef closes the pot with a lid and seals the edges with dough to avoid the steam from escaping and thus building up pressure!

And may I venture to suggest that the 'how does it work' part of the article needs working on.
Shall be glad to be of assistance if needed.
