We have Han Solo and Leia in the EG, but how about a few of the other major characters;
Obi-wan
Darth Vader
Luke Skywalker
Boba Fett
Jabba the Hutt
The Droids (Threepio and Artoo, and others)
Chewbacca
Yoda
and I'm sure there could be Entries on groups; such as Ewoks, Bounty Hunters, Mos Eisley regulars etc.
With some imagination it could be a fun little project.
