I've driven a bit in the area around Welshpool, and around the reservoirs there. I totally agree with your comments about the size of bike for the narrow roads etc (I drive a Moto Guzzi 650 GT). My own personal preference is for a bike that gives you an upright sitting position - this occasionally gives you a better view over some of the hedges of the road ahead.
Also, (certainly round Welshpool,) there is a bigger danger than sheep; many of the local young farmers drive like idiots. At least on a bike you stand a bit of a chance of avoiding them as they come racing round a blind narrow single track lane!
