SALAMANDAPALAGANDA 2006

For Em and any other vegetarians

POTATO YAHNI

Serves 4
cooking time 40 mins

1.5 lb. potatoes, peeled
8oz. onions, peeled and chopped
2 cloves garlic, peeled and crushed
12 oz. tomatoes, skinned and chopped
2 teaspn. sugar
1 or 2 bayleaf, optional

Cut potatoes into uniform size
Fry onions and garlic in olive oil with the poatoes for 2-3 mins
Add tomatoes, sugar, bayleaf, salt and pepper to taste, add water to barely cover..bring to boil, cover and simmer untill poatoes are soft..
Serve hot from the pot...

SPANISH POTATO OMELETTE

450G/1LB WAXY POTATOES
salt and pepper
1red onion
1clove garlic
1red pepper
4tablespoons of olive oil
100g/4oz frozen peas
6 large eggs
2oz chedder cheese
2tablespoons chopped fresh parsley

1 peel and cube the potatoes cook in boiling salted water for 5 mins or until tender drain peel and chop onion and crush garlic deseed and chop the pepper
2 heat half the oil in a large frying fan fry the onion for 3 mons add the garlic,red pepper,and peas fry for 3 mins then transfer to plate

3 heat the remaining oil add the potatoesand cook for 8 minutes beat the eggs add the cheese season return the onion mixture to the pan with parsley pour eggs evenly over the mixture
4 cook omelette on low heat for 10 mins or until eggs are set loosen edges with palette knife and put on plate serve hot or cold smiley - blackcatjinty

Here is my recipe for Frankfurter Bean Hot Pot:

1 large tin of red kidney beans
4 slices of bacon, chopped
1 large onion, chopped
4 large frankfurters, sliced
50g of Very Strong Garlic Sausage, chopped
4 cloves of garlic, chopped
8 pimentoes
1 tbs of olive oil
300ml Clear boulion stock

Fry onion and bacon together in olive oil in a large saucepan until bacon it is golden brown.
Then add to the other ingredients the onion, frankfurters, garlic saugsage, garlic, pimentoes and kidney beans. Stir it together for 2 minutes and then add the stock. Cook for a further 15 minute. Serve with a stick of sliced French bread.

It also can be eaten with either and/or rice and new potatoes.

A quick butter sauce for white fish, if you do not have any flour

Unsalted butter
1/2 pint of Milk
1 tablespoon of the fish water
1 teaspoon of Salt
Black Pepper
Cayenne Pepper
1/4 teaspoon of Mixed herbs

Mix above ingredients in a saucepan and add a medium sized cooked chopped potato to the sauce and let it gradually assmillate into the mixture. Pour over the fish.

TOAST

INGREDIENTS

Slice of a bread of your choice
Butter
A topping of your choice (i.e. Jam, Marmite, Marmalade).

Instructions

Place slice of bread into a toaster and leave on for a few minutes. Get toasted bread out, if it looks not tii done for you liking place it back in and wait a few more minutes. Repeat this until you have you desired toasting.
Spread a even layer of butter over each slice of toast, followed ith an even spreading of the topping of your choice.

Potato Salad

1kg of salad potatoes
8 slices of French Garlic Sausage
A few sprigs of fresh rosemary
A few fresh sprigs of basil
A few fresh sprigs of rosemary
A few fresh sprigs of chives
A few flower heads of chives
4 tablespoons of Olive Oil
2 tablesppoons of Cider or Wine Vineagar
Quarter of an orange pepper, quarter of a red pepper, quarter of green pepper and a quarter of an yellow pepper
4 cloves of garlic

Cook the potatoes until just firm
Wipe Basin with garlic.
Place garlic aside
8 shallots
Chop other ingredients and place inside bowl that has been wipened with bowl
Chop the garlic and add to the dish
Mix the olive oil and vinegar and then pour over the potato
mixture, then serve.

Make your usual recipe for lasagne, but use pancakes instead of lasagne sheets.

Polish Style Cauliflower

1 head of cauliflower divided into individual florets
6 tablespoons of breadcrumbs
1 small onion chopped
2 cloves of garlic chopped
2 teaspoons of dried sage
2 tablespoons of olive oil

Cook cauliflower as usual but leave it slightly ala dente not over cooked but with a slight crisp taste. Drain and leave aside. Heat the oil in the frying pan and then add the breadcrumbs, onion, garlic and dried sage. Fry until golden brown before adding the cauliflower and serving it.

Quadrupple Chocolate Malted Milk Shake

4 heaped level tablespoons of Real Dairy Chocolate Ice Cream (made with Cream and full fat milk)
2 heaped tablespoons of Chocolate Syrup
2 heaped tablespoons of Chocolate powder
3 tablespoons of boiling water
4 level tablespoons of grated dark chocolate
4 heaped tablespoons of horlicks
Chocolate Vermicelli to decorate
900ml Jersey chilled Full Fat Milk
1 teaspoon of vanilla essence
6 tablespoons of Jersey Extra thick double Cream, whipped

Mix drinking chocolate powder, horlicks and syrup with boiling water. Mix in full fat Jersey milk, extra thick 4 tablespoons of Jersey double cream, chocolate ice cream and vanilla essence.
Pour into 4 tumblers.
Top each with the remainding Jersey Extra thick double Cream and sprinkle with chocolate vermicelli.

sandwich recipes

serves 4-8 people

boiled eggs and tomato sandwich
filling

4 boiled egg (moderately hard boiled)
4 tomato
rolls or sliced bread

cool boiled eggs (cook for 3-5 minutes)
butter bread
pour boiled water on tomato in a bowl
wait until skin starts to become loose
take tomatoes out with for fork wait until cool before skinning them
shell eggs and slice them
and put on plate
skin tomatoes and slice them
put tomatoes and eggs on bread. season with salt and pepper

some sliced cucumber 1/4 cucumber
a good quality mayonnaise
sliced tomatoes
wine vinegar to taste
seasoning salt and pepper

prepare bread
mix salmon, vinegar and mayonnaise, salt and pepper
add them to the prepared bread
add slice tomates onto the salmon filling

Cornflakes balls ( not only for vegetarians- but not fit for veganer ( vegans?) though)
you need:
1 box of cottage cheese
cornflakes
oatflakes
1 clove of garlic
1 onion
1 egg
salt, pepper, spices

Take the emptied cottage cheese box and fill it once with cornflakes and once with oatflakes, mince garlic and onion, mix and crunch it all.
Form flat (non)meatballs and fry them in very hot fat.( If you've got a deep-frying pan form small balls to fry )
Eat them hot or take them to a party, you'll not have to worry about rests to bring back home

Hot Appetizer:

This one sounds simple, but is tricky; it proved popular with Texans;

1 Pkg Hot Dogs. . (Other sausages may do as well,
. . . . . . . . . . . . . . . .can be vegetarian, all beef, or regular)
1 Can Beer. . . . . . (Any kind you like, around 12 oz.)
Hot Sauce . . . . . . (Tobasco, Pepper-Sauce, Louisiana Gold, etc.
. . . . . . . . . . . . . . . .original recipe called for 1-3 tsp,
. . . . . . . . . . . . . . . .I use 2 to 3 times that much)
Cubed Cheese. . . (Milder cheeses like string cheese don't stand up
. . . . . . . . . . . . . . . .well to the spiciness. Try Cheddars or Colby's)
Olives. . . . . . . . . (Black, green, or both)
Cocktail Onions
Cubed Ham Pieces

Pour the beer into a saucepan, at least three times the volume of the beer, and heat.
Cut the sausages into bite-sized piece and put them into the beer.
Once the beer starts boiling, add as much hot-sauce as you think you can take.

The tricky part is all in the beer. The idea is to boil the liquid in the beer away. It boils, and boils, and boils; you must watch this. It will eventually froth up just before collapsing into a thick, red sauce of hops, malts, other grains (depending on the beer), and hot-sauce.

I used to serve them on buns, but found they are easier to take for most people on toothpicks, alternating with other ingredients.
