I made this last night and it went well because the step by step recipe was so clear.

I was very glad about the tip of putting cut sweet potato in water to stop it from going black. A raw sweet potato is very firm and difficult to chop, so it took me almost the full 20 minutes - the first pieces would have gone very black by the time I had finished if I hadn't put them in water.

I underestimated the volume of the ingredients, as I halved the recipe so thought it wouldn't be too much. I was just about able to squeeze everything into my big saucepan, though, so it was fine. It looked very watery at first and I wasn't sure how it would turn out, but by the time everything had simmered for the specified number of minutes, the sauce had thickened up nicely smiley - biggrin

Quite a lot of effort for me, as I'm not good at chopping, but I enjoyed the experience. Plus I have another portion in the fridge and two others in the freezer, so it was worth the effort smiley - ok
