Strictly speaking, Susan Oliver's "Vina", Meg Wyllie's "The Keeper" and others were in two episodes - "The Menagerie, Part One" and "The Menagerie, Part Two".

Strictly speaking, neither Vina nor the Keeper were actually physically encountered by Kirk, but by Pike instead .
In any case as it was originally filmed, they appeared in only one episode, original pilot 'The Cage'. Chopping and changing bits into later episodes doesn't count – so 'Trials and Tribble-ations'' Arne Darvin doesn't count either. You could have argued that the character of Commodore Mendez appears in both part of 'The Menagerie', but he didn't actually exist for most of the time.
In any case, as they wouldn't count as being two separate encounters, but one prolonged encounter lasting twice as long as normal, the two-parter doesn't count. So there
