It sounds obvious, but... keep the door shut! That way, you'll keep the heat in. If you've got windows (or anything else) that regulate the temperature automatically, they'll probably work best if you do as much as possible to maintian a 'stable' temperature.

Potatoes can be grown in a big flower pot or bucket in the greenhouse. It is a bit too late to start now, but you can have new potatoes for Christmas in this way.
The same goes for lettuce. Check the seed merchants' catalogues for suitable varieties.
If you have a heated greenhouse then the world is your lobster...
