The high chair never worked for my son, him seeing it as a 'challenge' to try and escape the restraints.
From as early as he first attempted feed himself, we found a childs stool pulled upto a low coffee table worked a treat. Admittedly he occasionally wanders off, but usually only when he's had enough.
Funnily enough he'll sit as happy as larry in the restraints of his car seat.

kids eh? Don't think we'll ever work them out!
but thanks for that... we all have our different ways of dealing with stuff... just nice to share so we have a few more options to try! I'm currently spoon wrestling with my youngest (a 5 month old) so I might need some more neat tricks up my sleeve ready for this time around LOL

My son, at the age of 3, knew how to use a spoon, even a small fork, and feed himself, but he had a thing for mashed potatoes. No matter what was on them, butter of gravy, or what else was on his plate, his hand had to get into the mashed potatoes.
About this time I remarried and The Kid had a brand new step-dad, who loved him no end. New Dad was REALLY put off by this kid mucking about in his potatoes, and stood it just as long as he could. One night at supper, The Kid was having a merry time messing in his potatoes, and New Dad finally blew! He slammed his hand down on the table, made us both jump, and simply said, "You're far too big a boy to do that. Use your spoon." The Kid looked like he was going to cry, changed his mind, and picked up his spoon. Dad thought he was a big boy, and I guess that was enough for him.
Incidently, The Kid is an adult now, and he and his Dad are the best of friends, and still spend as much time as possible together.

Mines just turned 2. He won't let you try and feed him anymore or help him out, he HAS to do it himself. Unfortunately he can't grasp the concept of keeping a spoon/fork on a level plane from bowl to mouth and by the time it actually does reach his mouth, its upside down. Bless him lol.
The next time I buy a carpet and the sales man asks me what colour and style I want I'll ask for 'non-descript food' lol.

Mine was Mr Independence at that age, too - he tried to do everything for himself. By the time he was 3, I was so tired of Me Do! I was also tire of my Mom asking me if I knew my son's pants or shirt was on backwards/inside out. He wouldn't let me change them around, either.
