A Conversation for Simple Beef Curry
Frying chilli powder

Trying to burn (or even *almost* burn) chilli powder is NOT a good idea as this releases a stinging, choking gas.
Best thing to do is use fresh chillies and add then right at the end of the frying stage, or after you've added the liquid.
Also, all dried and ground spices are best roasted before adding them to the food. Put them in a pan over a low heat for a few minutes and remove before they start smoking. Don't burn them! This simple step will make your curry much more flavourful and means you don't have to try to burn them later.
