You could have a jacket spud as a substitue for boiled/roasted/chipped potatoes. When I do, I chop it not-quite in half (so that a bit of the skin hold it together along one side) and then go a bit made cutting the inside - there are so many cuts it look like Edward Scissorhands has been at it! It seems to soak up more gravy/sauce/whatever that way...
