Tomato sauces can be improved by adding half/one teaspoon of sugar, it brings out the flavour of the tomatoes really well.

Good point, this is a particularly good idea if you don't have good tomatoes because it compensates quite a lot. If I add sugar I like to add a bit more salt too.

Tried it last night. The half-spoon of sugar makes all the difference. Also added two chillies. Hhhhah....hhhahhh...hhhwhawww!

Yeah, I like to put some chilli in too, but my girlfriend doesn't like it so I usually go without
