The typical Palatinate dish is called 'Saumagen' which means 'the stomach of a female pig' - I know - It sounds repugnant, but it is delicious. The stomach is only used as an envelope for a delicious potato and meat mix (as in a sausage) - Luckily you don't have to eat the stomach.
(I've just been there @ BASF -- drank lots of wine and went hiking in the mentioned forests + visited Speyer and Worms - it's as the entry says: very relaxing and enjoyable)

Holy moly... Just saw the Saumagen right there in the entry (I skipped it because I thought the whole chapter was on wine)... Sorry for the redundant information.
