From what I understand back in the old days people would buy a small pig at the market and it would be put in the poke (sack) for them to carry easier. This practice also led to the phrase "let the cat out of the bag" because now and then a dishonest salesmen would slip a cat into the bag instead of the pig and when the bag was opened by the buyer the cat would escape from the bag.
