The Mercury sounds great, we have relatives in Denver, we'll try it next time we visit. Here is a review of a similar Houston (Texas, USA) cafe that goes back to the groovy 60's, man. The price symbol means around $10 +/-. My wife's favorite is the Gandalf, a huge sandwich with mostly avocado and cheese - the "slim" version is about half, and probably serves only one

Brothers Raymond and Forrest Edmonds are no longer "in the hole" on Shepherd, having finally moved their esteemed healthy food eatery to a half-timbered house near the moribund Greenbriar entertainment district. No matter. Even with the new location and name, their menu remains as tasty as ever. The sandwiches and burgers are still the stars here, particularly the Martinique burger, a mountainous half-pound patty of Angus beef with so many messy toppings that you practically need to be hosed down when done eating. We still can't figure out how Hobbit prepares its delicious tabbouleh, but we'll have to keep ordering it until we can reverse-engineer the recipe at home. It's all enough to make even Smaug the dragon happy.
